I am having trouble finding valid Diet Type Subcodes.

My items qualify for Vegetarian and Vegan, but they aren't certified, I don't necessarily know how to fill that out.

If your products are not certified and don’t explicitly state “Vegetarian” or “Vegan” on packaging, it's safer to leave those fields blank.
If you do want to indicate vegetarian or vegan attributes, it’s wise to only fill those fields if the packaging clearly reflects that claim, preferably backed by valid ingredient lists, and ideally certified or vetted.
Using these claims without packaging support could be considered misleading, even if not legally penalized.
