On the User video, about 3:40 in, there is a demo of how the screen can be set up for tablets and phones. It goes very fast and we cannot replicate this. Could some one explain this in a few steps?

In your browser, you can get to developer tools by hitting F12. This has options to "simulate" your screen on other devices such as a phone or a tablet. I advise using Chrome for this. However, it is nothing more than a simulation.
If you want to see/feel the real effects you would use your phone or tablet, open a browser like Chrome, and simply go to DigitalCatalog.1WorldSync.com and log in to see the responsive design of DC working on their specific device.
