Your first step would be to ensure the Parent GTINs (the higher linked levels such as the Case, Pallet etc) of the UPC you need to unlink are not published or part of published hierarchies. The Links cannot be changed while these are published, all publications must first be removed.
The second step is to wait 25 hours if publications have been deleted. There are a couple of scenarios where the 25-hour wait period is required, they are presented in this article, if additional information is needed:

You can proceed with updating the Links to include the correct UPC after the 25 hours are up by first Unlinking the incorrect UPC, and then Linking the correct GTIN to the existing hierarchy.
